History of apple syrup
was used for centuries to sweeten meals. The Germanic peoples were familiar with a method of long-term storage of apples, which were made by boiling the surplus apples in wide pots until all the moisture had evaporated. They were left with a puree that could reach a sugar content of no less than 50%, because of this high content the puree had a long shelf life.
Production process apple syrup
Making goes all year round, but apples don’t grow all year round. How do they do this? The fruits are delivered in the period from September to December. After this, they are processed as quickly as possible with a cooking process, after cooking, the fruit mash is filtered and pressed. Then 2 substances remain, thin juice and a kind of oil cake called pulp. The pulp consists of fibers, cores and stalks and is sold as animal feed.
The thin juice is filtered and evaporated into a concentrate, this concentrate is stored in a cooled tank which allows a long shelf life.
Because this concentrate remains shelf-stable, it can be made all year round. In the Netherlands, only a few companies produce syrup, Frumarco & Canisius are well-known producers.
